Pascoe searching for more gold in London

The New Zealand Paralympian swimmer Sophie Pascoe is searching for her second gold medal at the London Games overnight.

11 New Zealand athletes are in action on day two including Pascoe, cyclist Nathan Smith, the brother of All Black Conrad Smith, in the men's pursuit final, shot putter Peter Martin and equestrian Rachel Stock in the team overall test.

Pascoe won New Zealand's first gold medal at the London Paralympics this morning setting a new world record in the process of defending her 200 metre individual medley title.

Tonight she'll look to make it two golds from two events in the women's 50m freestyle with her heat starting at 9:30pm.

The final will be about 5am Saturday morning.

After just two years at the helm of The New York Times' dining section, Sam Sifton moved over to the National desk, where he is currently the editor. Sifton was a different kind of critic, weaving in literary and rock 'n' roll references throughout reviews of restaurants he analyzed in poetic tones. He honored the art of food critique and angered an avid readership by giving greater focus to the more theatrical elements of dining in New York: the setting, the cast of characters, the dialogue?all parts of the restaurant puzzle less thoroughly dissected by other critics.

He also brought attention to under-the-radar ethnic restaurants and places whose praises might otherwise have gone unsung. The Sifty Fifty, a list of his 50 favorite restaurants in the city, served as a kind of new Zagat guide, and people turned to Sifton for guidance on where to find the best spaghetti carbonara in Manhattan and how to impress a girlfriend's finicky parents.

No need to continue speaking of Sifton's skills in the past tense, however?his new cookbook, which draws from his experience answering reader questions during Thanksgiving, will hit shelves October 30th. To whet our palates in anticipation of the book's release, Sam shared his favorite places to eat undercover in and around his Red Hook neighborhood.

Pizza, slice: The best neighborhood slice is at House of Pizza & Calzone. It is, however, very difficult just to have a slice there. The point of the restaurant is the deep-fried calzone. It is not crispy, precisely. It is never greasy. It is simply a pillow of ricotta built around a slice of ham, wrapped in a cloak of gold. It is the finest calzone in New York City. This is true even on Fridays, when there is no ham in it.

Pizza pie: Lucali is the clear winner here, even when the wait to get into the dining room runs to 75 minutes and the tension mounts in your head like steam. It's a great pizza. That much will be revealed in time.

Cheap burger: Sit at the bar at Rocky Sullivan's, watching the game, chatting with George, drinking a Bud. Here comes a cheap burger, and it's just fine above its nest of fries, better still with another Bud and a slash of mayonnaise across the bun. Salt that. On the best nights there isn't a soul for two blocks in any direction and the smell off Erie Basin is all saltwater and tidal funk. This is what we do.

Fancy burger: Consistency matters. The Good Fork has it?and a warm, grown-up neighborhood vibe to go along with the food. Here are parents and children and parents of parents, third-daters preening, everyone in between. Have a burger at the bar, along with a spouse, child, or downloaded novel, and see.

Sandwich: There are plenty good sandwich options at Defonte's, an old dockworkers' canteen near the mouth of the Battery Tunnel. But fried eggplant with fresh mozz and a scattering of hot peppers is the best, best consumed with a Manhattan Special coffee soda and two tabloid newspapers in 30 minutes or less, sitting in the front seat of an American-built vehicle.

Coffee: Stumptown roasts coffee in Red Hook, but no longer seems to sell it brewed in any sort of helpful way. You need to head all the way up to Iris Caf?, under the BQE, to find it made.

Bagel: There are no credible bagels available in South Brooklyn at this time. Head up the slope to Prospect Park instead, get a dozen at Terrace Bagels, and count yourself lucky.

Delivery food: There are no credible food deliveries available in South Brooklyn at this time. You hear that, Andy Ricker? Some Pok Pok wings to go, brought on a bike, real fast?

Breakfast: Stay away from brunch and good coffee. Eggs over-easy and dishwater joe at Court Street Coffee Shop should put you in the mind of the neighborhood that was, and which should always sort of be.

Dive bar: Sunny's is hardly a dive bar even if it looks like one. Does that make it the winner? That is something to discuss over a beer at Red Hook Bait & Tackle, anyway.

Nicer wine, beer, or cocktail bar: Buttermilk Channel?it's so nice we call it a restaurant. The burger's right up near neighborhood best, and the fried chicken walks away with that prize. Brunch brings throngs, and the fall brings a deep hunger for lots of duck meatloaf, as often as possible. But Doug Crowell's artful and excellent wine list is reason enough to bring people to crowd 'round the bar experiencing the length and breadth of American wine making?and perhaps staying late enough to drink deeply of its bourbon traditions as well.

Chinese takeout: What has happened to Chinese takeout food in South Brooklyn and Brooklyn Heights in the past 30 years is nothing less than a tragedy, and there is nothing in the region to compare to the greats of the past, notably the late lamented Chun Yuan and China Chili, both on Montague Street. But Lichee Nut will do in a pinch?at least so long as you add to whatever order you make at least one plate of dry-saut?ed green beans or bok choy with garlic.

Late-night eats: One of the great things about South Brooklyn is that it folds like a tent around 11. You can haunt your way along Smith Street looking for late-night grub. But the dark side streets tell the story. This is sleepytown, USA. Hit the BQE and head up to Williamsburg, you want that late-night steak frites.

ASUS is expanding its Zenbook lineup to include a larger 15-inch model. The company just announced the Zenbook U500, an Ultrabook packing some pretty robust internals. There's an Ivy Bridge Core i7 processor under the hood, along with an optional NVIDIA GT650M graphics chip and up to 512GB of storage. No word on weight yet, but the package measures 0.78 inches at its widest. The U500 also keeps in line with other Zenbooks' aluminum design, complete with the famous spun-metal lid.

The 15-inch form factor gives the U500 room for a separate numpad on the keyboard (there's backlighting here, too). For storage options, you get either dual SSDs with up to 512GB capacity or the combination of a 128GB solid-state drive and a 500GB hard drive. And, like ASUS' other latest Zenbooks, this machine will sport a full HD, anti-glare display with IPS technology. The company has yet to announce pricing and availability -- that info will come at the company's Windows 8 press event.

Camera Shy? Get Over It! - Business 2 Community

Looking for an employee for your startup? Video interviewing is here to help! There is no ?typical startup? and traditional means of hiring don?t always work. Hiring and retaining the best talent is as tough as it?s ever been, with projections through 2012 indicating that, for the first time in U.S. history, the number of younger workers entering the labor market won?t be enough to replace those who are leaving according to Entrepreneur.com.

According to a 2012 Aberdeen study, Many companies used the video format to interview job candidates for all levels from entry-level to the top ranks. In fact, 52 percent of companies who interviewed using video experienced shorter recruiting times, and 47 percent improved cost per hire.

Why use video? You might wonder, ?Have we become so technology oriented that we can?t even take the time to sit down and talk with someone face to face?? But hiring managers aren?t turning to video out of laziness. They are coming to realize that video interviews offer benefits for both the company and for the job seeker. Aside from convenience, video interviews cut down on costs and save time for companies.

Another advantage is that the one-way interviews (or Spotlight Interviews as we like to call them) make it possible for both the interviewer and the interviewee to accommodate their schedules. Taking the initial expense of interview costs out of the equation when first screening your candidates saves both of you the expense.

Also, aside from the information in the candidate?s resume that likely grabbed your attention, the video interview provides you an opportunity to see the job seeker?s personality and communication skills. You can learn a lot from their body language, and professionalism (dress and grooming habits) as well.

So maybe this seems a little too ?Jetsons? for you. But guess what, video interviewing isn?t brand new. It?s been around and is just now being adapted and enhanced to better serve you and the job seeker. The job seeker of today is comfortable with the technology and is constantly looking for innovative opportunities to best showcase what they can bring to the table. Georges St-Pierre says he?s medically cleared to fight

The UFC welterweight champion is now cleared to compete. Georges St-Pierre shared the good news on his Facebook page.

Yesterday was the final chapter of my Road to Recovery- I'm now medically cleared to compete in professional mixed martial arts! Big thanks to all my fans for the amazing support during those 9 long months of rehab- couldn't have done it without you.

St-Pierre tore his ACL while preparing for a bout with Carlos Condit. While GSP rehabbed, Condit fought Nick Diaz for the interim welterweight belt. Condit won with a tight decision. Since he was not given a chance to defend the interim belt, it turned out to be just a really shiny, kind of heavy reminder of Condit's no. 1 contender status.

The two are slated to fight at UFC 154 in Montreal. GSP's last fight was on Apr. 30, 2011, against Jake Shields. By the time he fights on Nov. 17, St-Pierre will have had 572 days off between fights.

Logitech introduces washable keyboard

I keep cleaning and cleaning my keyboard, but it still looks grungy; if only I could throw that sucka in the washing machine. Of course I can't, but Logitech is coming out with one that can be hand-washed???with real water.

The Logitech Washable Keyboard K310 ($39.99)?is a full-size keyboard with drainage holes.?There's a dunk maximum of 11 inches, so we're thinking you'd likely scrub it down in the?kitchen sink.?

The keys "can last up to five million keystrokes, meaning this keyboard can take a washing, as well as a pounding," the company says.

The keyboard ??which is configured?for Windows only ? should be coming to stores in the U.S. this month and in Europe in October. It is not wireless.

There are definitely some caveats when it comes to washing this keyboard, caveats that might steer the laziest folks away from thinking all their dirty-keyboard problems are solved. Specifically, "Do not wash in dishwasher." It bears repeating, along with other helpful guidance:

Hand wash only. Use mild soap and a soft cloth in warm water less than 30cm (11 inches) deep and less than 50?C (120?F). Do not wash in dishwasher. Do not use abrasives, alcohol, solvents or harsh detergents.

And most importantly: "Do not submerge the USB cable."?

Clear Spot Voyager


How does all the data you could possibly want for less than $50 per month sound? Pretty good, I know. That's just what you'll get using the Clear Spot Voyager, Clear's latest, and best, hotspot. It's super tiny, which makes it incredibly portable, and unlimited data means you can even use it as your primary home internet connection. There's no 3G support, so it will only work in Clear's 4G coverage area, and its small size makes it difficult to determine things like connection status and battery life on the device itself. But that's a small price to pay when you consider how great a deal the Voyager is otherwise. It's so good, in fact, that it's our latest Editors' Choice for hotspots on Clear.

Pricing and Physical Features
The main reason to consider Clear as a cellular service provider is because it's one of the only carriers to offer truly unlimited data. There are two plans available for the Voyager. The less expensive one costs $34.99 per month, and gets you unlimited 4G WiMAX data, with download speeds capped at 1.5Mbps and uploads at .5Mbps (which effectively means 3G-like speeds, albeit only where there is 4G coverage). The $49.99 plan also gets you unlimited data, though there's no cap on download speeds, while uploads are limited to 1Mbps. Keep in mind that this modem is 4G-only, so be sure to check Clear's 4G coverage map to see if service is available where you live and where you plan to travel.

Verizon Wireless and AT&T may offer much faster 4G LTE, but those plans start at $50 per month, and only get you 4 or 5GB of data (respectively), which you can easily run through on a rainy day watching Netflix. Now that Virgin Mobile has access to Sprint's abandoned 4G WiMAX network, it too is worth checking out for inexpensive, contract-free broadband. You can get 2GB of 3G data for $35 per month, or 5GB for $55. But both of those plans come with unlimited 4G WiMAX data, so if you fall in the coverage area, be sure to take a look.

One thing's certain: You're not going to find a smaller hotspot anywhere else. At 2.6 by 2.6 by 0.5 inches (HWD) and just 2.1 ounces, the Clear Spot Voyager is smaller than a stack of Post-it Notes. It's made of matte silver plastic, with black plastic grilles along the side. It's attractive, in a minimalist way, and small enough to slip into any pocket. It's still big enough for a 1830mAh battery, which was good for an impressive 7 hours and 45 minutes of 4G streaming on a full charge.

The Voyager has a single Power button on the front edge, next to three different status lights. On the device itself, you can monitor battery life, network status, and whether or not anyone is connected to the hotspot. This is done using multicolor status lights and a series of blinks. It can be a little difficult to decipher at first, but if you ever get lost, the meaning of each LED indicator is listed clearly on the back of the modem. There's also a sticker with the Voyager's Wi-Fi network name and password, which you can change after your initial log-in.

Setup?and Administration
Since this is a mobile hotspot, you don't need any drivers to use it (unless you're running a laptop with Windows XP; more on that in a second). The Voyager uses 802.11 b/g. To connect, simply turn it on, and use your computer or device's wireless connection manager. You can connect up to eight devices this way; I connected a phone, laptop, and a tablet at the same time and they all worked just fine. If you're running Windows XP, instructions are provided to download additional drivers (after initially connecting to the modem) for optimal performance.

You can also tether the modem to your computer via USB cable. I did so with a laptop running Windows 7 and it automatically installed its own drivers and connected quickly and easily. Speeds were similar to what I saw with Wi-Fi.

There's also an excellent Web-based management console, which you can access by sending a connected device to http://clearspot. The console is well laid out and extremely easy to use. From there you can monitor signal strength and battery life, check out who's connected to the router, and control a wide range of router settings. It's fairly comprehensive, allowing set your Wi-Fi options, enable port forwarding and firewalls, and modify a host of security options, along with simpler options like changing your network name and password.

Head Start: Early Learning in Brain-Damaged Rats Compensates for Cognitive Deterioration

Rat studies show that cognitive control, an ability eroded in disorders such as schizophrenia, could be protected with brain training

Early experiences not only shape adult lives, but they might also protect against future cognitive problems resulting from brain damage, according to neurobiologists studying the mental abilities of rats with brain lesions. Typically, these lesions impair a rat's ability to focus and filter out distractions. But scientists now have evidence that an early behavioral intervention could prevent this effect.

Researchers at the State University of New York Downstate Medical Center, the Nathan S. Kline Institute for Psychiatric Research, and New York University have demonstrated how just teaching young rats to focus on relevant cues could protect against cognitive decline related to their brain injuries. The finding appears August 22 in Neuron

"We never imagined you could do something for these animals that could essentially compensate for a major developmental defect," says neuroscientist Daniel Weinberger at the Lieber Institute for Brain Development at Johns Hopkins University. Weinberger, who is unaffiliated with the study, calls this work a totally novel approach and discovery.

In a healthy brain, cognitive control allows an individual to devote resources toward a specific object and tune in to only the correct cues. This is what, for example, allows you to pay attention when your boss is talking to you despite the appearance of five new e-mails in your inbox and a ringing telephone. This control deteriorates, however, as a consequence of certain brain injuries and in certain mental disorders such as schizophrenia.

For this study, researchers induced a brain injury in rats by injecting seven-day old pups with neuron-killing acid. Specifically, they targeted a region of the brain called the ventral hippocampus. The hippocampus is a region implicated in memory; it also neighbors the brain's cognitive command center, the prefrontal cortex. Rats that receive this injection possess normal cognitive functioning in their youth and adolescence, but as they enter adulthood, they show sharp cognitive and behavioral changes. These changes occur because as the brain continues to develop, the injury's damage is amplified.

The scientists first compared the cognitive control of healthy adult rats with those that had brain lesions. They placed rats on a rotating arena. Rats had to attend to cues in the room to orient themselves and avoid a region of the arena that would send a mild electric shock to their feet. As expected, adult rats with normal brains learned to avoid getting zapped much more quickly than those with lesions.

After demonstrating the normal cognitive deficits in these rats, the researchers added an additional level of comparison. They trained a group of adolescent rats?some with and some without lesions?to attend to relevant stimuli in a rotating arena. As adults, the trained rats were compared with damaged- and normal-brain rats that had received no training. Researchers placed these rats in a new study environment: a T-shape maze in which certain branches of the maze would be electrified. As in the previous experiment, untrained lesioned animals struggled to avoid the electrified areas. Brain-damaged rats with training, however, performed at the same level as healthy rodents. These adults had retained cognitive control even after maturation.

In addition, the researchers examined the rats' brain activity using electrodes. The scientists found that untrained lesioned individuals display low synchrony, meaning neurons fired in an uncoordinated manner, in the brain's inter-hippocampal region. But the trained rats?with or without lesions?displayed very similar, synchronous brain activity.

From Florida, Lessons To Guide A Potential IPFW Split From Purdue & IU

When veteran State Sen. Dennis Kruse suggested the General Assembly ought to break IPFW away from the Purdue and Indiana university systems, we thought the idea sounded familiar.

Turns out our friends at?StateImpact Florida have been covering a similar story.

With a prominent Florida lawmaker behind them, a branch campus of the University of South Florida is breaking away from the larger university to form a new university ? a school supporters hope will give the local economy a boost and?bring more state money?to the campus, much like in Fort?Wayne.

However, if our colleagues? reporting on the Florida split is any indication, making IPFW the state?s sixth public university might not go over well with students or faculty and could come with a high price?tag.

In April, Florida Gov. Rick Scott approved a move by that state?s legislature to break University of South Florida Polytechnic away from the school?s flagship campus 40 miles away in Tampa. The school will now be known as Florida Polytechnic University.

?Stepchildren?

With joint funding from IU, Purdue University has administered IPFW as a regional campus since the school opened in 1964.?But Kruse, a Republican from the Fort Wayne area who chairs the Senate?s Education Committee, told a local paper?Purdue treats IPFW like a ?stepchild? and could sustain itself independently of the state?s two largest universities.

The argument in Florida was similar, our colleague John O?Connor?says.

Florida State Sen. J.D. Alexander, himself a high-ranking state lawmaker, successfully convinced the legislature and Gov. Rick Scott to allow the University of South Florida Polytechnic to break away from its parent campus in Tampa, 40 miles?away.

The move formed Florida Polytechnic University ? a brand new, STEM-focused university located on a brand new, still-under-construction campus.

?Don?t be fooled,? Alexander told Tampa?s WTSP-TV. ?USF?s priorities are [in] Tampa. They?re not here. They will never be?here.?

Just like Purdue?s priorities in West Lafayette, not in Fort?Wayne?

?A?lot of people think that Purdue University doesn?t advocate properly for IPFW,? Kruse?told the?Greater Fort Wayne Business Weekly.

Students Want Brand, Not Independence

A survey last September found students at USF Polytechnic, however, overwhelmingly disapproved of independence for the school for a reason that should sound familiar to IPFW students:

The USF name was identified as important for the following reasons:

  • It?s an established university among Florida?s state universities.?
  • It has name recognition when marketing to potential employers.
  • The college degree has a higher value with the USF name on?it.

In other words, ?brand recognition.?

Sales Information Junkies: Don't Become One Yourself | Millionaire ...

During the recession and high unemployment of the past few years, millions of people were forced to find a new way to make a living, and running a business doing web design, internet marketing, and other services for local small businesses has become hugely popular, and for good reason: It?s a suite of services that every small business needs.

Along with that, an entire cottage industry has sprouted, selling ?how-to? books, videos, and other information products on how to run this sort of business successfully.

Somewhere along the line, I bought one of their e-books, wondering what kind of sales advice they were giving. To keep a long story short, it wasn?t very good, but what I really found interesting is what happened next.

The Cult of the ?Info Junkie?

As a result of buying that one product, I somehow ended up on endless email lists promoting these types of offers. And there are many, at least one per day, and usually several each day.

For the most part, they?re low-cost: Usually five or ten dollars to download a PDF and some screen videos. I bought a couple out of curiosity, and they were rubbish. You certainly get what you pay for.

However, it was reading the reviews of these products that really blew my mind. The website that sells these products allows people to comment, and many of these junky e-books have hundreds of comments & reviews from people saying how great they are.

And here?s what?s more: The reviews are always from all the same people! In other words, the same people are buying each and every one of these offers. The big problem, of course, is that these people are reading book after book, instead of simply getting to work. It?s a bad form of procrastination.

Sales Training: A Dirty Secret

I see the same thing going on in the sales training industry. Speakers, authors, and training companies do on-site sales training at businesses and corporations. And they?re all telling people to cold call.

The reason is two-fold: First, because that?s what the ?old school? sales managers and directors who hire them want to hear. The trainers are merely instructing the reps to make cold calls, as their managers are already telling them to.

But, it?s the second reason that?s the more insidious one: They know full well that cold calling scripts don?t work anymore, and by telling people to cold call, they?ll keep them failing, and keep them coming back for more and more training!

This is the same way a lot of shady ?self-help? and ?self-improvement? types operate. You pay to go to a seminar that?s full of a lot of hype, and at the end you?re up-sold to the next (and more expensive) seminar to get the ?real? answers. And then the same thing happens there. And on and on it goes.

Even if you?re not going to seminars or having live training brought into your office, you?ll experience the same thing with 99% of sales books on the market. I know I did. When I started out in sales, I was a miserable failure. I cold called ? like my boss told me to ? and when it didn?t work, I started reading every sales book and listening to every CD I could get my hands on.

And they all said the same thing! ?It?s a numbers game? and ?make more calls.? A lot of them even advocated pushy, shady sales techniques that I wasn?t comfortable doing. Finally I got lucky and was hired by a manager who told me that cold calling is a waste of time, and a professional salesperson should never do the job of a minimum-wage telemarketer. He teamed me up with a top rep who made huge sales numbers without cold calling, and he taught me his methods.

Over the next few years I continued my learning experience of figuring out ways and means of generating hot, qualified leads ? people who are ready to buy right now ? without ever cold calling again.

After all was said and done, I became a top sales superstar. Top in my company, and even in my city, as far as I know. And what about all those other reps, who kept on reading more and more sales books, going to more seminars, and having the same ideas drilled into their heads?

Nothing. That?s what happened to them: Nothing. Some are still struggling, and others have given up completely and moved on to new careers. Don?t let that happen to you. Don?t be an information junkie. Get into action instead ? figure out what works, for you ? and start succeeding!

Our Trying to Conceive Bucket List 7 Things We Checked Off Our Bucket List Before Trying to ConceiveI have been writing on Being Pregnant now for almost a year, though for the better part of the year I wrote about my crazy baby fever wanting another child, but my husband was not yet on board. About 7 months ago that changed and we?ve been actively trying to conceive since (fingers crossed for us this month).

Pregnancy is not an easy process for me ? not because of the symptoms (which do suck), but my biggest struggle is?staying?pregnant. ?In the seven years we have been trying to become parents or working to grow our family, I have been through 12 miscarriages, with my most recent being only a few months ago.

Our history was a huge area of discussion while deciding if we were going to try to conceive another child, but with plans in place, doctors on board and a good support system we went with following our heart versus letting our fear dictate our family size.

As much as I would love to take credit for infecting him with baby fever with my clever ideas, there was a list of things we put together before we actively started to try. My husband was always open to the idea, but before adding to our chaos with a complicated pregnancy and a noisy and needy newborn, there were some areas of our life we wanted to settle first.

(AP) ? Kristin Chenoweth says injuries she sustained while filming the CBS legal drama "The Good Wife" last month will prevent her from returning to the show.

In a statement issued Monday she expresses "deep regret" she'll be unable to return in her recurring role "at this time." She'll appear in the season premiere, airing Sept. 30.

The 44-year-old actress was hit on the head by a piece of equipment while on the show's New York City set July 11. She was briefly hospitalized.

She says she's "getting better slowly."

Chenoweth won a Tony Award for her role in Broadway's "You're a Good Man, Charlie Brown" and an Emmy for her work on "Pushing Daisies." Last season she starred in the short-lived series "GCB."

Travel like a vegan rock star | This Dish Is Veg - Vegan, Animal ...


Traveling can be difficult for vegans.? We face the unpleasant choice of eating boring foods (French fries, spaghetti marinara, salad) or compromising our values because of a lack of available vegan food.? At least that?s what non-vegans have been telling themselves so that they can justify the ?need? to remain carnivores.

But this is a myth and nothing could be further from the truth.? Traveling as a vegan is not only easy, it?s so much fun that you?ll want to sell everything you own and travel full time.? You just need a little preparation and some research of your destination and you?re ready to travel like a vegan rock star.? Or better yet, travel like a vegan chef.

One of the biggest problems (and misconceptions) when converting to veganism is that we are depriving ourselves.? That is upside down thinking.? Don?t think of it as deprivation but as an expansion of your culinary horizons.? It should be a way to explore new produce and spices rather than a retreat to the tried and true peanut butter sandwich.? Sure you can live on that but why would you want to when the world is full of all sorts of culinary options for the vegan traveler.

For most of us, travel is in the form of vacation.? No one wants to eat a boring meal while on vacation.? Whether you?re on vacation or traveling for business, you can jazz up your repertoire by taking a closer look at what?s going on around you and by bringing along a few essentials.? First, make yourself a chef?s survival kit.? (Even if you?re not a real chef, you can act like your own personal chef anywhere you go.)?

You?ll need the following:

A bamboo cutting board (Bamboo is lightweight and best for traveling.? It?s also sustainable.? You can even find them at the dollar store these days.)

A 10? chef?s knife (I like Wustoff-Trident, but it doesn?t matter what brand you buy as long as the handle is well constructed and weighted properly.)? If you have the money, get a sheath for it.? Otherwise just wrap it well.? If you don?t know how to use it properly, go to YouTube and watch this video on how to use a Chef?s knife.

A paring knife or a utility knife for small things.

A mortar and pestle.? (Yes, this is old fashioned but the alternative is carrying an electric spice grinder.? Your choice.)? A small bamboo set costs less than $10 and will last forever.? Word to the wise: Don?t wash it, just wipe it out.

If you?re willing to spend the extra money, get a 3-cup rice cooker.? They are $15 on Amazon and can be used for much more than rice.? You can actually cook most foods in one and it?s lightweight and portable.

In addition, you will want something to carry your kit in.? I use a laptop case to carry the cutting board and knives and a man?s shaving bag for the mortar and pestle.? I also carry some chia seeds, olive oil and salt.

Now you?re prepared to make just about anything at your destination.? Mind you, you can?t bake in a rice cooker but you can learn to find alternatives.

Next, go on the internet and read about what kind of food the locals eat.? Not what kind of vegan food, just what kind of food.? Look up some recipes; get a feel for the culinary layout.? Then make a veganized version of a recipe from that region at home to launch your travel adventure.?

For example, say you?re going to New Orleans.? They eat a lot of seafood, and sausage is big deal.? Restaurants will be a challenge, but more and more eateries are recognizing the need for vegan alternatives.? For the inside scoop, let?s do a search.?

The search parameters ?vegan New Orleans? showed 7 restaurants and cafes in addition to a vegan blogger in New Orleans.? Her blog is informative and definitely helpful.? She also has a blog that unites vegans for drinks at various watering holes.? This is an excellent resource.? Contact her, show up for drink, ask lots of questions.? Maybe someone will know of a great place for vegan pastries or maybe a new vegan pho restaurant just opened and they are dying for business.? Local bloggers and foodies are always good sources of info.

Once you?ve gotten a little knowledge under your belt, do some exploring.? Put on some comfy vegan shoes and walk around the trendy areas and see what?s going on.??? Go to a bar in the French Quarter and talk to people.? Ask what their favorite meals are.? Let the local eaters tell you what to eat instead of eating the same salad and spaghetti you can get anywhere in the world.?? And be brave.? If you want to eat at the local cafes and restaurants, great, but I also encourage you to go shopping at the local market, then break out your kit.


Get some rice and lots of Cajun spices.? Look for Goya red beans.? Buy whatever veggies are local and in season.? Take all of it back to your room and plug in the rice cooker.? Following the instructions, prepare your rice for cooking, add some spices and start cooking.? After about 10 minutes chop up your veggies and place them on top of the rice/spice mixture and add the beans.? Continue cooking.? Voila!? Vegan Red Beans and Rice in?New Orleans.

You?ll also want snacks for the plane.? You are allowed fruits and nuts and salads, although liquids like water and juice have to be purchased at the airport after you?ve been through security.

Once you get the hang of traveling with your kit and searching for vegan foods in? other locations just like you do at home, you?ll be traveling like a vegan rock star!? Convicted scam artist nabs prime prison real estate | Mike Aldax ...

Completing his transformation from community pillar to heartless pilferer, Keith Wilson is heading off to prison.

The slick-dressed businessman who posed as an outspoken advocate for the Richmond district while scamming community members out of hundreds of thousands of dollars has struck a plea bargain with prosecutors that packs a five-year state prison term, the District Attorney?s Office said. Wilson, 56, is expected to be sentenced Thursday.

At one time, locals said, Wilson appeared to have it all. His son reportedly attended a private elementary school and his wife played tennis almost daily at a country club. He contributed funds toward community causes, was highly active in business and social circles, and was an outspoken opponent of bus rapid transit on Geary Boulevard.

But those who came to trust Wilson would eventually discover his dark side. The man who had been a fixture at merchant meetings, according to locals, had been defrauding trusting community members with a ?far-reaching? real estate investment scam.

In January, Wilson was arrested in Stockton and later charged with bilking seven people out of more than $400,000 total. Police said Wilson used his fake persona as a wealthy community cheerleader to persuade locals to invest in distressed or foreclosed properties. He promised to buy the properties, fix them up and resell them at a profit.

But Wilson, who failed to produce the profits, never purchased the properties, and several investors grew suspicious. They investigated and learned that an investment made on a Milpitas home had never been acquired by Wilson or his businesses, Tribecca Properties LLC and Lone Cedar Corp.

At the time of his arrest, a member of the Greater Geary Boulevard Merchant Association who requested anonymity said Wilson ?lived really well with those people?s money.?

Attorney Jordanna Thigpen, who is largely credited with bringing the scam to light, said a senior citizen had invested $115,000 with Wilson, a ?substantial? portion of his retirement savings. After Thigpen filed a lawsuit on behalf of three victims, Wilson disappeared, leading to a 22-month police hunt and 34 search warrants.

On Friday, Thigpen credited San Francisco prosecutors for delivering swift justice. That doesn?t happen often when it comes to financial fraud, she said.

?Often it is difficult to have these people sentenced,? Thigpen said. ?Look at Wall Street; they?ve done way more damage than someone who?s done a drug crime.?
