Serves: 6
Ingredients
? cup fresh raspberries
2 shallots, chopped
4 tablespoons red wine vinegar
2 tablespoons Dijon mustard
? teaspoon salt
? teaspoon black ground pepper
2 tablespoons walnut oil
1 pound fresh string beans (approximately 4 cups)
3 tablespoons walnuts, coarsely chopped
6 cups mixed greens
Instructions
1. In a food processor, pulse the raspberries with shallots.? Add the vinegar, Dijon mustard, salt and pepper.? Slowly add in the walnut oil.? Set aside.
2. Steam the string beans until crisp-tender, about 8 minutes, or until desired doneness.
3. Place walnuts in a small non-stick dry skillet over medium-low heat, stirring about 2-3 minutes until toasted.? Transfer to a small bowl to cool.
4. Combine string beans and mixed greens and toss with prepared salad dressing.? Sprink with toasted walnuts.
